125g/4oz plain flour, sifted
100g/3½oz butter
1 teaspoon caster sugar
4 eggs, beaten
300ml/half pint water

1. Preheat the oven to 220°C / 425°F / Gas 7. 2. Sift the flour, beat the eggs and whip the cream. 3. Put the butter and water in a pan and heat gently until the butter has melted and the water starts to simmer. 4. Turn off the heat under the pan. Quickly add the flour and beat well. 5. Gradually add the eggs, beating all the time, until the mixture is glossy. 6. Spoon the mixture onto a damp baking tray, making separated blobs. 7. Bake for about 20 minutes until lightly brown. 8. Pierce each bun to let out the steam and allow to cool. 9. Split each bun and fill with whipped cream. 10. Melt the chocolate, in a bowl over a pan of hot water, then pour the chocolate over the buns. Bonsai makes the choux pastry.
